01Overview

Peru | David Flores Washed Sidra

High in the mountains of northern Peru, producer David Flores is exploring the potential of exceptional coffee varieties. At his farm, Finca La Neblina, he cultivates Sidra, a rare and highly regarded variety celebrated for its expressive aromatics, vibrant acidity, and remarkable sweetness. Through traditional washed processing, David allows the distinctive character of Sidra to take center stage. The result is an elegant, fruit-forward cup with bright citrus, tropical fruit sweetness, and a delicate, syrupy finish. A beautiful expression of a fascinating coffee variety, the place it comes from, and the care of the producer behind it.

02Producer

Meet the Producer

For David Flores, coffee is both a family tradition and an opportunity to innovate. The son of coffee producers Faustino Flores and Sara Chilcón Rojas, David began working toward specialty coffee production in 2016, driven by a desire to improve quality on his family’s farm, Finca El Morito. Today, David manages his own farm, Finca La Neblina, while also serving as General Manager and legal representative of El Morito, an organization connecting more than 150 independent coffee producers. His work balances the independence of individual farmers with the shared opportunities created through collaboration and export. At La Neblina, David has planted approximately 12,000 Sidra trees using seeds he personally brought from Ecuador. This ambitious project reflects his commitment to experimentation, continued learning, and building a future for exceptional specialty coffee in Peru.

03Origin

Where it comes from

Cajamarca, in northern Peru, has become one of the country’s most exciting regions for specialty coffee. Its mountainous terrain, varied microclimates, and high-elevation farms offer ideal conditions for producing coffees with exceptional sweetness and complex acidity. Finca La Neblina sits in the upper reaches of El Diamante, in the San Ignacio province, at elevations between 1,850 and 1,900 meters. Here, cooler temperatures and consistent airflow encourage coffee cherries to mature slowly, allowing sweetness and complexity to develop over time. The farm’s name, La Neblina, translates to “The Mist,” a fitting name for a high-altitude farm in the Peruvian mountains. This distinctive environment provides an exciting setting for David’s exploration of rare varieties like Sidra, Geisha, and Marshell.

04Process

How it was processed

This is a washed coffee. Washed processing begins by removing the outer fruit from freshly harvested coffee cherries. The beans are then fermented to break down the remaining mucilage, rinsed, and carefully dried. This traditional method is known for producing clean, vibrant coffees with distinct acidity and clarity, allowing the natural characteristics of the variety and its growing environment to shine through.

05Roast

How we roast it

Our approach to roasting this Sidra is centered on highlighting the unique qualities of the variety while respecting the work David has put into producing it. We’ve chosen a light roast to preserve the coffee’s natural complexity, vibrant acidity, and delicate aromatics. By carefully managing development, we aim to bring balance and clarity to the cup, allowing its sweetness and nuanced flavors to shine. The result is a clean, expressive coffee that reflects both the character of its origin and the care taken at every stage of its journey.
